Bombay Halwa

These soft munchies are a pure way of celebrating any occassion for that matter.
The thought of preparing this halwa is a delight.
And by the time you make them, you will really feel the softness even while you stir the batter.
The measurements are very very important.

Now getting back to the seat.. You need :

50 gm Corn Flour
200 gm Sugar
225 ml water

Method :

Let's prepare the sugar syrup first.
Put 200 gm sugar into a pan.
Add 125 ml water.

Keep stirring in sim mode until all the sugar dissolves.
Now pour in 1tsp of lime juice.
Off the stove and keep aside.

Again, take a wide pan, and a tbsp of ghee.
Do not switch on the stove.
To 50gm cornflour, add 100 ml water and stir well to avoid lumps.

Pour this mixture into the pan and stir well.
Now switch on the stove and keep in sim.
Mix well.
When the batter starts to thicken, switch off the flame immediately.

Slowly add the prepared hot sugar syrup a tbsp everytime and stir simultaneously.
We do not want to prepare the halwa when the stove is on as the heat of sugar
syrup is itself enough.
Slowly add all the sugar syrup and keep on stirring.

Add 5 tbsp of ghee and stir continuously.
Add your prefered color powder.

Add chopped almonds and cashews.
Keep stirring until the batter gets its elasicicity and comes in lika a ball.
When you place a pinch of this batter into a drop of water, you should be able to
roll as a tiny non sticky ball.
This is the time you can place the entire batter into a greased tray.
Once tha batter gets cooled, make slices using a greased knife.

The soft soft halwas are ready.
