Aravana Payasam / Nei Payasam


This payasam is very popular in Kerala, and happens to be the most favorite sweet of the Lord Krishna himself of Guruvayur temple. 
The first time i tasted this payasam, I fell in love with the taste and for sure was a very yummy sweet.
It asks for more and you always want more and more of it everytime you taste it.




Ingredients :

The broken rice ( I usually use raw rice and give a quick dry stir in the mortar to have them broken. Sometimes I cook as it is and woud not bother to break the rice., ) - 1 cup
Jaggery - 1 cup
Elachi Powder - 2 tbsp
Cashewnuts and Raisins to garnish.
Ghee - 1/2 cup

Method :

  • The sweet tastes best, if done in the ' Uruli ' vessel commonly found in Kerala. Can do the same using the regular cooker as well.
  • Start by washing the rice thoroughly. Add enough water, say 3 cups water for 1 cup rice.
  • Let the rice cook enough and do not get smashed.
  • Meanwhile, in a pressure cooker or a wide pan, add in the grated jaggery and add enough water to immerse them and allow the jaggery to melt.
  • No consisitency is required. Once the jaggery melts, add in the cooked rice and stir on continuously.
  • Pour in the ghee.
  • Stir until the mixture gets thickened.
  • Garnish with ghee fried cashewnuts and raisins.

The delicious Nei Payasam is ready :-)
