Cherupayaru Payasam

The Cherupayaru Payasam as it is popularly called in TN and Kerala, a healthy and tasty payasam demands just a few ingredients and few steps to get them ready..

Ingredients Required :

Green Moong Dal - 1 Cup
Jaggery                  - 1 and half Cup
Elachi                     - 1 Tsp
Ghee                      - 2 Tbsp.
Coconut Milk       - 1 Cup
Cashews and Raisins - Handful

Method :

The green moong dal is thoroughly washed and added in a vessel to be cooked in Cooker for 5 to 6 whisltes. Or until the dal gets well cooked. An approximate 2 cups of water would be enough to boil the dal.
The boiled dal is well smashed and allowed to cool down.

In a wide pan, the jaggery is immersed in as much water that would be required to immerse them.

Once the jaggery gets dissolved, a generous 5 to 6 minutes stirring is required, after which the smashed dal is added, again stirred together for 5 more minutes.
The coconut milk is also poured in now, and left for another 5 minutes. After the coconut milk is poured, the boiling point of the liquid can be avoided.
The elachi is sprinkled on top and garnished with ghee roasted cashews and raisins.

My Tip : Can take the Coconut milk in 2 portions as 1st and 2nd milk.
With little water and full of coconut grinded contributes to 1st milk.
From the crushed coconut we again take out the milk by further adding water and grinding.
2 tbsp. of coarse coconut pieces will yield to a crunchy bite on every delicious sip.
